Chicken Tikka

Ingredients

  • 2 Lbs. of Chicken Tenders cut into 1½-inch cubes
  • ½ Cup Plain Yogurt
  • ¼ Cup Olive Oil
  • 1 Tbsp. Fresh Lemon Juice
  • 1 Tbsp. Chopped Ginger
  • 1 Tbsp. Chopped Garlic
  • 2 Tsp. Kosher Salt
  • 2 Tsp. Paprika Powder
  • 1 Tsp. Turmeric Powder
  • 1 Tsp. Coriander Seeds, toasted and ground
  • 1 Tsp. Cumin Seeds toasted and ground
    GARNISH- Lime, Cilantro, and Red Onions
    UTENTILS NEEDED: Metal or Wooden Skewers (If using wooden; soak in water for 20 minutes

Instructions

  1. Place all the ingredients except the chicken into a mixing bowl and mix thoroughly using a whisk.
  2. Add chicken and mix with hand to make sure each piece is coated and refrigerate marinade for at least 4 hours.
  3. Remove the marinade from the fridge and let it sit for 20 minutes prior to skewering.
  4. Preheat grill to 350 degrees. As your waiting for the grill, skewer 5-6 pieces of chicken per skewer leaving ½ inch in between.
  5. Place the skewers on grill, cook 4 to 5 minutes each side or until chicken is fully cooked.
  6. On a large plate remove chicken from skewers and garnish with cilantro, slices red onion and lime wedges.
