Aloo Ghobi

Ingredients

  • ½ Cup Olive Oil
  • 2 Pounds of Cauliflower, cut into one-inch pieces
  • 1 Pound of Potatoes cut into one-inch pieces
  • 1 Tbsp. Lemon Juice
  • 2 Tsp. Cumin Seeds
  • 2 Tsp. Mustard Seeds
  • 1 Tbsp. Ginger (Minced)
  • 1 Tbsp. Garlic (Minced)
  • 1 Cup of Tomato Puree
  • 2 Cups of onions (Diced)
  • 5 Cups of Water
  • 1 Tsp. Coriander Powder
  • 1 Tsp. Turmeric Powder
  • 1 Tsp. Garam Masala
  • 1 Tsp. Black Pepper & Salt

Instructions

  1. Heat oil in a heavy bottom pan. Add cumin and mustard seeds and cook until golden brown.
  2. Add diced onions and cook for 2 to 3 minutes, then add ginger and garlic, cooking for another 1 to 2 minutes.
  3. Add tomato puree, coriander, turmeric, garam masala , potatoes, and 3 cups of the water, covering the pot and cooking for 7 to 10 minutes.
  4. Add cauliflower and 2 more cups of water, stirring to coat cauliflower with spices.
  5. Cook the cauliflower for another 5 to 8 minutes.
  6. Remove the cover and gently stir cauliflower.
